Nothing is sweeter from the shellfish kingdom than the delicate soft shell crab. Today you can enjoy one of nature's tastiest delicacies with an Asian twist.

What is a soft shell crab? As the oceans warm, blue crabs emerge from the mud and begin to molt, or shed their shells, so their bodies can grow. Within 12 hours of molting, their soft skin turns leather-like. Within a day or so, the hard shell returns. Crabs typically molt a half-dozen times a year.

So how are they caught at the right time? Molted soft shell crabs hide in tall underwater grass, making it impossible for them to be caught, so commercial fishermen catch crab in the shell and hold them in water tanks until they molt. They are removed and transferred to wet straw-lined boxes to be kept moist and cool during shipping.
